A strong bitter pours light amber to deep copper, clear under a low head. It tastes of more of everything than a best bitter: more malt, more caramel, more hop flavour, more alcohol, from 4.6 up to 6.2%. The balance runs from even to clearly bitter, and the style leaves brewers a lot of room.
Where it comes from
Strong bitter is the higher-gravity member of the British bitter family, which grew from pale ale as a draught beer after the late 1800s. In England, ESB is a Fuller’s trademark: Extra Special Bitter, a single, well-known beer with a strong, complex malt profile found in no other example. In the United States, ESB became the general name for a malty, bitter, reddish English-type ale, and craft brewers make many.
Burton-upon-Trent versions use water high in sulphate, which dries the finish and can add a minerally, slightly sulphury note. British pale ale, bottled for export with more carbonation, comes close to a strong bitter.
How to serve it
Serve it at 10–13 °C in a nonic pint, from the cask when you can. Pair it with roast chicken or fish and chips, an English cheese, or a maple bread pudding.
Next to its neighbours
A strong bitter shows more malt, hops and alcohol than a best bitter. Next to an American pale ale it has more caramel malt and fruity yeast, and an English rather than American hop character.
